Join us for an unforgettable evening at the Columbia Restaurant in Ybor City as we continue our 120th-anniversary dinner series with a special rum-paired experience featuring Papa’s Pilar. This five-course dinner will be hosted by Master Distiller Ron Call, a seventh-generation distiller with over 45 years of expertise, alongside Andrea Gonzmart Williams, fifth-generation caretaker of the Columbia.

Papa’s Pilar Rum was inspired by Ernest “Papa” Hemingway’s adventurous spirit and named after his cherished boat, Pilar. Crafted in Key West and blended in Florida, these bold, well-traveled rums reflect a deep commitment to tradition, quality and storytelling.

Ron Call, who helped shape Florida’s modern rum legacy through decades of innovation and craftsmanship, will guide guests through the unique flavor profiles of each pairing and share insight into the artistry behind Papa’s Pilar.

During our five-course wine dinner, we will serve:
