I: Shigoku Oyster – A bright, briny opening.
II: Salmon Gravlax – With cucumber, lemon, and cashew cream.
III: Spring Green Risotto – Asparagus, parmigiano, pecorino, and a toasted barley & sunflower seed crunch.
IV: Jasmine Pear Kombucha Sorbet – A botanical palate cleanser.
V: Rhubarb Pistachio Custard Tart – A textural, seasonal finale.

Gee cooks with curiosity and a deep respect for the season. Drawing on her years at Farmer's Apprentice, Ugly Dumpling, and Au Comptoir, her food speaks through honest flavours, thoughtful technique and an honest celebration of local ingredients.
