We invite both the seasoned tea practitioner and the curious epicurean to explore a "dialogue" where tea is not just a beverage, but the primary partner to the season's finest ingredients.

The Menu

I: Shigoku Oyster – A bright, briny opening.

II: Salmon Gravlax – With cucumber, lemon, and cashew cream.

III: Spring Green Risotto – Asparagus, parmigiano, pecorino, and a toasted barley & sunflower seed crunch.

IV: Jasmine Pear Kombucha Sorbet – A botanical palate cleanser.

V: Rhubarb Pistachio Custard Tart – A textural, seasonal finale.

Each course is paired with a carefully selected tea, prepared through traditional gongfu style or contemporary infusions.

We will share the stories behind each tea and the intention of every pairing, while leaving space for your own sensory discoveries.

Hosted at Say Hey Cafe, each session is kept small to allow for a more personal and immersive experience

Gee cooks with curiosity and a deep respect for the season. Drawing on her years at Farmer's Apprentice, Ugly Dumpling, and Au Comptoir, her food speaks through honest flavours, thoughtful technique and an honest celebration of local ingredients.
