January 8-11, 2025
Nico Albert Williams is a chef and student of traditional Indigenous cuisines. Now the Executive Director of Burning Cedar Sovereign Wellness, she began her culinary education in CA and AZ. Later she relocated to Oklahoma where she embraced her return to the post-removal homeland of her mother’s people. Her journey to learn traditional Cherokee ways, dishes and the wild and cultivated ingredients involved in their preparation grew to encompass the Indigenous cuisines of tribes from all parts of Turtle Island. Her work has been featured regionally and nationally by Food Network Magazine, USA Today, BBC, Smithsonian Institute, PBS, Gilcrease Museum, and Philbrook Museum among others. Her residency at Seven Acre will showcase the breadth and depth of Williams’ knowledge of indigenous cuisine, as well as her interests in Mexican and Acadian foods.
January 8th, A CHEROKEE DINNER: Chef Williams explores the food and cuisine of the Cherokee, from their ancestral homelands through removal to Oklahoma. The dinner will tell a story of the Cherokee through both time and space and focus on the unique indigenous ingredients and foods that have defined the Cherokee Nation. In this dinner, she showcases the depth of her studies and knowledge of the Cherokee Nation’s foodways. Bar opens at 5pm. Dinner at 6pm. $85/pp, + 20% service charge in lieu of gratuity, includes 5-course tasting menu. Alcoholic and N/A beverages available for purchase.
January 9th, A TASTE OF TURTLE ISLAND: In the second night of her residency, Chef Williams highlights foods and producers from across indigenous North America as she curates a menu and tells stories that reflect the remarkable diversity of Turtle Island’s Native foods. Bar opens at 5pm. Dinner at 6pm. $75/pp, + 20% service charge in lieu of gratuity, includes a 5-course tasting menu. Alcoholic and N/A beverages available for purchase.
January 10 & 11, CHEF NICO’S KITCHEN TAKEOVER: For the final nights of her residency, Chef Williams showcases her favorite dishes from her years as an award-winning chef and caterer in Tulsa. These dishes weave together her interest in indigenous, Mexican, and Acadian cuisines. Reservations from 4-8pm. 3-course pre-fix menu. $45/pp, +20% service charge in lieu of gratuity. Alcoholic and N/A beverages available for purchase.
