Experience a five-course journey where traditional ingredients like nopales and local mesquite are transformed into a fine dining experience, perfectly paired with local wines or mocktails.

• COURSE 2 (Vegetarian): Esquites Mousse Stuffed Squash Blossoms / Maseca Tempura Batter / Smoked Black Bean Spread / Paprika
• COURSE 3: Creamy Mashed Yucca / Tortilla Breaded Nopales / Chorizo Rojo Demi-Glace
• COURSE 4: Mesquite Smoke-Braised Cornish Hen / I'itoi Dijon Sauce / Tamale Foam / Pickled Cholla Bud
• COURSE 5 (Dessert): Petite Fry Bread Tossed in Burnt Cinnamon Sugar / White Chocolate Ganache / Candy Cane Meringue Shards
