Dijon and Cognac Beef Stew takes center stage at Colonel Mustard’s ongoing salute to the world’s greatest condiment.

Please join us as Chef Dragus of Black Forest Foods Café and Deli in Monument creates a rich comforting stew to bid adieu to winter’s chill. Seared flour-dusted beef cubes are simmered for hours in a Cognac Pommery and Dijon wine stock brimming with carrots onions and sautéed mushrooms. It’s the kind of dish that can’t be rushed. All the chopping sautéing reducing and braising results in an exceptionally flavorful stew that’s as satisfying to eat as it was to cook.

Our Dijon and Cognac Beef Stew will be ladled into an artisan bread bowl baked by Master Chef Joshua Aldarondo owner of Delicias Bakery in Colorado Springs.

The prix fixe dinner includes a pre-set garden salad tossed with our Champagne Mustard Vinaigrette a glass of red wine from Sonoma County and for dessert: a warm-from-the-oven Mile High Apple Pie served with a scoop of Colonel Mustard’s famous mustard ice cream.
