Join us February 8 at 5pm to celebrate local, Michigan brews and farms! Le Cheile is teaming up with Speciation Cellars to bring you a five-course, hyper-local menu, featuring Speciation beer pairings:First Course: King Salmon
Beet-cured salmon, roasted celeriac, heirloom carrot, Cranberry Incipient gastric
Pairing: Cranberry Incipient
Second Course: Winter Greens
Swiss chard, kale, celery leaves, watermelon radish, roasted carrots & shallots, house cider vinaigrette
Pairing: Speciation Cider
Third Course: Porchetta
Underbru-infused porchetta, braised collard greens, roasted butternut squash
Pairing: Underbru Saison
Fourth Course: Smoked Chicken
Cherry wood-smoked chicken thigh, chestnut mushroom & orca bean ragu
Pairing: Michigan Fuzz
Fifth Course: Basque Cheesecake
Roasted sweet potato, chevre, honey
Pairing: Macaronage Sour
