Razor Blade Clams:
This buttery and soft meat clams, plentiful in California, Mexico and the east coast of United States, are special order and flown from Boston. If you never had them please do it at least once in your lifetime, they are a delicacy to die for! Pan seared with avocado oil, Salsa Macha, lime juice and cilantro.
Shrimp Pescadillas
These are a very peculiar "crispy shrimp tacos" from the Mexican state of Veracruz. Crunchy, fresh and light, drizzled with salsa, crema and avocado sauce. Top it with a spicy salad served on the side for those who love to take their tastes buds for a full ride while their heart speeds up just a bit to catch up and match the food tempo.
Jumbo scallops in aguachile verde.
Sweet, meaty scallops are paired with a medium-spicy velvety green salsa de aguachile, cucumbers, red onion.
Corn Kernnel Cake:
Not made with corn meal, corn flour Maseca, or dry corn, but with fresh corn kernels from cobs from Mexico. Those are a little bit starchier, meatier and less sweet than the American counterpart. It makes for a cake with a bit of sweet-tamale character in it, served with sweet Rompope liquor sauce.
