Enjoy small bites designed to awaken the palate.
Smoked Eggplant & Olive Tapenade Crostini
Char-grilled eggplant blended with smoked paprika, lemon, and Kalamata olives, served on crisp crostini with a drizzle of pomegranate molasses.
Crispy Polenta Triangles with Roasted Red Pepper Jam & Balsamic Fig Glaze
Golden-fried polenta triangles layered with sweet-savory roasted red pepper jam and finished with a delicate balsamic fig glaze and micro basil.
First Course
Moroccan Harira with Autumn Chickpeas and Herbs
A richly spiced tomato-based soup layered with chickpeas, lentils, and aromatics of cumin, cinnamon, and coriander. Finished with lemon zest, cilantro, and parsley.
Second Course
Roasted Fennel & Citrus Salad with Almond Ricotta and Mint
Roasted and shaved fennel paired with orange and grapefruit supremes, mint, and pistachio crumble over almond ricotta. A vibrant balance of sweet, savory, and herbal notes.
Third Course
Chermoula-Roasted Cauliflower Steak with Parsley Mashed Potatoes & Preserved Lemon Emulsion
Thick-cut cauliflower steaks marinated in fragrant chermoula made with parsley, cilantro, cumin, coriander, and smoked paprika, then slow-roasted until golden. Served over parsley mashed potatoes infused with roasted garlic and finished with a preserved lemon emulsion and toasted pine nuts.
Dessert
Orange Blossom Semolina Cake with Cardamom Syrup & Pistachio Cream
A tender semolina cake soaked in orange blossom syrup and spiced with cardamom, topped with pistachio cream and rose petals.
Includes: One glass of wine (with a non-alcoholic alternative available), plus coffee and tea service.
