Mead is one of the oldest alcoholic beverages in human history, yet modern fermentation science has dramatically improved how it can be made today. Join us for an engaging presentation by Dr. Matthew Ellis, founder and head meadmaker of Waffle Sauce Meadery in Merritt Island, Florida, and current President of the American Mead Makers Association.
Dr. Ellis holds a PhD in chemistry from Florida State University and brings a unique blend of scientific knowledge, practical experience, and an approachable teaching style to the subject of fermentation. In addition to running Waffle Sauce Meadery, he works as a Principal Engineer in aerospace, with experience at companies such as SpaceX, Blue Origin, and Lockheed Martin.
In this presentation, Dr. Ellis will introduce the fundamentals of meadmaking, including how honey composition affects fermentation, how yeast transforms honey into alcohol, and the key techniques used to produce clean, high-quality mead. Whether you are simply curious or thinking about making your own mead, this will be a fascinating and informative evening.
