Led by Kymberly Wroble, MS, RD, LD, WSET III, President of the American Wine Society – Chicago Chapter, this immersive session invites you into the cellar to uncover the artistry, science, and sensory decisions that define Champagne’s most iconic styles.
Through six carefully selected wines, you’ll experience how blending, reserve wines, and time shape the balance, depth, and personality of each cuvée. Compare crisp, linear styles to richer, oak-influenced expressions while exploring:
• The art of the blend and the power of reserve wines – how still wines from past harvests bring complexity and consistency to each cuvée.
• The role of oak – how fermentation or aging in barrels introduces texture, spice, and depth.
• Malolactic fermentation and texture – how the choice to allow or block MLF transforms acidity, creaminess, and mouthfeel.
• Multi-vintage and solera approaches – how forward-thinking producers layer vintages to achieve continuity, freshness, and individuality.
