Join us for an exclusive Olive Oil Masterclass with renowned expert Emily Lycopolus on Thursday, October 10th at LaSalle College Vancouver.

The Masterclass:
This 3-hour industry-focused masterclass will be presented by Emily Lycopolus, a respected food industry expert, bestselling cookbook author, and one of only two Olive Oil Sommeliers in Canada

Bringing her 15 years of experience in the olive oil industry to the table, Emily will be serving comprehensive training to empower professionals to use olive oil with confidence. In this class understand the best importing and buying practices, the common misconceptions and the key facts about olive oil, how to incorporate olive oil into commercial settings as well as uncover the right way to read and interpret product labels. Using cobalt-blue tasting glasses certified by the International Olive Council (IOC) Emily will bring you into the world of identifying olive oil flavor profiles, quality, health benefits, chemistry, and how to understand the nuanced and unique attributes of this culinary staple like an expert!

Designed for industry professionals who want to gain confidence in their olive oil buying, this intensive program will be a comprehensive learning experience that will give you confidence in your selections and be a trusted source for customers to purchase olive oil from.

This Masterclass will be offered on Thursday, October 10th at LaSalle College Vancouver. Register for one of the two sessions:

  • Session 2: 4:00 PM – 7:00 PM

About the instructor:

The Olive Oil Critic was created by Emily Lycopolus, one of only two, level 2 Olive Oil Sommeliers in Canada. With 15 years of experience in the olive industry, Emily has taught over 500 culinary students and many more enthusiasts have been introduced to olive oil. Frequently sought after to support olive producers, grocery retailers, and distributors, the Emily will teach you how to understand every bottle of olive oil, share tips on tasting the differences between one olive oil and another, and how best to use each one and pair it with food and menu. Emily is also an educator at George Brown College culinary school and the author of eight cookbooks books, winner of Gourmand, and Taste Canada awards, and had her books featured at Nobel House in Sweden. Her degree is in Life Science from Queen’s University and an MA in Cultural Anthropology.
