This immersive class is designed for baking enthusiasts ready to learn professional techniques in a fun, interactive setting inside The Mix’s beautiful Wasserstrom Culinary Kitchen.

Day 1: Demonstration + Participation
Chef Autumn will guide you through the dough-making and lamination process — the signature layering of butter and dough that gives croissants their delicate texture. Watch each step up close as she demonstrates how to properly “lock in” the butter, fold, and turn the dough to achieve that signature flake. You’ll also participate in key steps to gain a clear understanding of the process before your own bake day.

Day 2: Hands-On Baking
It’s your turn to create! Under Chef Autumn’s guidance, you’ll roll, cut, shape, and fill your croissants with French cheese and rich chocolate batons, then bake them to golden perfection. As the aroma fills the kitchen, Chef Autumn will share expert tips on proofing, freezing, and repurposing croissant dough for other pastries — ensuring you can bring these bakery-quality results to your own kitchen.

At the end of class, you’ll taste your warm, buttery creations straight from the oven and take home your own batch of beautifully crafted croissants.
