Our Roots

This dish honors the sweetness of what we’ve carried from generations before us — suya from the West African streets that raised us, and matzo from the ancient tables where resilience was first tasted. A course that reminds us: our roots are strong, but they’re not rigid.

Pomegranate-glazed lamb shank over jollof rice

The body of the meal, where the past meets the possible. Slow-braised lamb offers softness and strength, wrapped in the sweetness of pomegranate — a symbol of life and healing. All resting on jollof, the ever-faithful dish that nourished nations and reunions alike. This is a celebration of overcoming, rebuilding, and becoming whole again.
