Hands-On Miso Workshop & Rare Miso Tasting Experience
Learn the art of traditional Japanese miso making in a welcoming, small-group workshop. Using only soybeans, rice koji, salt, and water, you'll create approximately 1.5 kg (3.3 lb) of additive-free miso to take home and naturally ferment for five months or longer.
This isn't just a cooking class—it's a chance to experience one of Japan's oldest fermentation traditions. Along the way, you'll taste several handcrafted misos, learn why traditional methods matter, and discover the techniques used by Japanese miso makers that have been passed down for generations.
Whether you're completely new to fermentation or already love Japanese cooking, you'll leave with a deeper appreciation for miso and the confidence to make it again at home.
WHAT YOU 'LL EXPERIENCE:
🫘 Make Your Own Traditional Miso
Prepare approximately 1.5 kg (3.3 lb) of homemade miso using only:
- Soybeans
- Rice Koji
- Sea Salt
- Water
You'll mix everything by hand, pack your miso correctly for fermentation, and take it home to age naturally for five months or longer.
RARE HOMEMADE MISO TASTING
Taste up to three different handcrafted misos and discover how different beans and aging periods create unique flavors.
You'll enjoy the tasting with:
- Pre-made miso soup
- Fresh vegetable sticks
Depending on availability, tastings may include:
- Yellow Soybean Miso
- Red Soybean Miso made with rare Japanese soybeans
- Chickpea Miso OR red bean (azuki) miso
You may even have the opportunity to compare different aging periods to experience how flavor develops over time.
👨👩👧 Family-Friendly:
No knives or stovetop cooking are involved, making this a great hands-on experience for families with children (parent/guardian participation required).
🌱 Vegan-Friendly (upon request):
The miso-making portion is naturally vegan. A vegan tasting option with kombu & shiitake dashi is available with advance notice.

- Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued.
