Join Cayo Coco at the American Cancer Society Magic City Cocktail Challenge Shaker Fundraising on Thursday, August 1st at Iron City Bham located at 513 22nd Street South from 7-10pm. Come witness the creativity and skills of our Manager-Josh Schaff as he shakes, stirs and mixes his way to the title of the Best Cocktail in Birmingham! Our competition drink called “Fins to the Left” will be made with Campesino Silver Rum and many other secret ingredients! We’ll also have a Mocktail version for you to try. This event is to honor cancer survivors, spread the word about reducing cancer risk and raising money to help American Cancer Society save lives. Our competition cocktail will be in honor of Cathy Collins who was the beautiful wife of our owner Andrew Collins and who fought the battle of Cancer with grace. May her memory be eternal! Meet Josh Schaff:
Josh Schaff an Alabama native, has served as the Operations Manager at The Collins Bar since 2013 and assumes the role of Managing Partner at Cayo Coco Rum Bar & Restaurant. Schaff and owner Andrew Collins teamed up in 2019 to renovate a space in Founders Station on First Avenue North and opened the Caribbean–inspired Cayo Coco Rum Bar & Restaurant. Cayo Coco, named after the popular island off the coast of central Cuba, is guaranteed to wow any visitor who wanders in to enjoy New Caribbean cuisine and tropical rum cocktails in the heart of downtown Birmingham, Alabama.
Josh began his bartending journey at Satterfield’s Restaurant where he diligently worked to shape the current landscape of the drinks culture through his unwavering passion and dedication. Witnessing the farmers bringing in fresh, locally foraged ingredients and watching the Executive Chef turn them into art he knew he wanted to contribute to this culinary experience. To develop his skills, Josh traveled to Seattle and Portland to learn from some of the best bartenders in the country and later attended Portland Cocktail Week, where he took seminars on unique spirits, Bacardi rum production, and hospitality.
Josh has been published in several local and regional and national publications and TV appearances teaching simple builds of classic drinks with fresh ingredients.
Josh Schaff's impact on the drinking scene in Birmingham is undeniable. His innovative approach to rum and cocktails has garnered attention from industry leaders, including Imbibe magazine, Liquor.com (http://liquor.com/), and Jeff "The Beachbum" Berry. His commitment to sustainability, education, and storytelling sets him apart as a true leader in the industry.
