• Herb-marinated grilled Sirdal trout: ramson (wild garlic) mayonnaise, pickled onion, winter apple vinaigrette and whipped crème fraîche

• Braised pork cheek with red wine sauce: caramelized apples, brussels sprouts and potato purée

• Chocolate nemesis with blood orange sorbet and crystallized chocolate
