Francisca Josina Vandersmissen was born in Hof ter Kwadewegen in Belgium's Pajottenland on a bed of hops and malt. The region’s noble beer lineage flowed freely through her veins. Years later, her sparkling appearance captivated Joos Frans Lindemans. In 1822, the young couple was wed and moved into the Vandersmissen farm brewery. Soon after, they started their family and began to brew lambic beer. Thus, Lindemans Brewery was born. After 200 years and nine generations later Lindemans is still family owned, operated, and brewing uniquely Belgian beers.
Join us as on Thursday July 21 as we explore five classic Linedmans brews paired with three delicious courses. Lining up on the taps we have five fruited Lindemans Lambics: Kriek (cherry), Framboise (raspberry), Cassis (Blackcurrant), Pecheresse (peach) and Apple. We have used fruit within each course to correspond with the beer across three modern takes of classic Belgian dishes.
To start you off on the night, chef Thomas has taken the traditional peasant soup, Waterzooi, and infused it with some smoked apple and salmon. To pair you up well be making you double up your brews with Pecherese and Apple. Moving to the main, Chef has taken influence from the classic beer and beef stew Carbonade. In place of beef, pork will be slow smoked before being added to a beer and berry gravy base with root vegetables. Served with a side of cheesy potatoes the main will be paired with both Framboise and Cassis. To finish you off we are going cherry on cherry on cherry paired with cherry! Classic Belgian waffles covered in a cherry flan and cherry sauce paired with the classic Kriek. What a feast!
