Carbonara & Pasta Skills is a lively, technique-focused demo class where you won’t cook...but you will eat everything we make. Y

ou’ll be welcomed with a complimentary charcuterie plate and a drink, then we dive straight into a night of technique and storytelling.

This class is built around one idea: a single technique, elevated five delicious times.We start simple and build toward mastery, tasting as we go.

1. Aglio e Olio: we begin with the foundation - The "mantecare" technique: creating a silky, emulsified sauce using nothing but garlic, oil, and “liquid gold.”

2. Pasta alla Gricia: building on our emulsification skill with traditional ingredients. Same technique: bigger flavor.

3. Carbonara: using the Gricia base, we introduce eggs. Timing, temperature, and technique come together to make the real thing: no cream, no shortcuts.

4. Pasta alla Zozzona...Carbonara on the wild side. We change how the eggs are used and let things get a little messy (in the best way). Bold, rich, and unforgettable.

5. Pasta Assassina: to finish, we break all the rules. A fiery, crispy, caramelized show-stopper cooked like no other pasta: a magical “pizza course” to end the night.

This is a fully guided demo experience: you relax, watch, learn, and eat your way through foundational Roman pasta technique.
