About this Event
Join TV chef Eva Pau and Korean chef Sangpil Hwang for a unique, hands-on kimchi-making experience. This interactive class combines authentic techniques, cultural insight, and practical skills you can bring straight into your own kitchen.
Eva Pau, presenter of Eva Pau’s Asian Kitchen on RTÉ One and author of Eva Pau’s Asian Cookbook, will guide you through the cultural background and cooking inspiration behind kimchi, while Chef Pierre brings over 15 years of international culinary expertise to demonstrate and teach traditional methods.
About Your Instructors
Eva Pau
A familiar face on Irish television (RTE One), Eva Pau is passionate about making Asian cooking accessible and enjoyable. Through her TV show and cookbook, she has introduced audiences across Ireland to authentic flavours and techniques from across Asia.
Chef Sangpil Hwang
Chef Sangpil Hwang has over 15 years of experience working across Korean, Japanese, Chinese, French, Greek, and Italian cuisines. His career has taken him from Ireland to Korea and Australia, including working with Michelin-starred Italian chefs from PECK and at Sydney’s renowned Alpha restaurant, where he contributed to large-scale events such as MasterChef Australia functions. Now based in Ireland, he runs “Dongne Pocha,” specialising in authentic Korean “Yasik” late-night dishes, and teaches Korean cooking at the Dublin Cookery School.
What You’ll Learn

Live Demonstration
- How cabbage is salted (pre-prepared for the class attendees)
- How to make authentic kimchi paste
- How to properly coat and pack kimchi
Hands-On Experience
Each participant receives a Kimchi Making Kit including:
- Pre-salted napa cabbage
- Kimchi paste (gochugaru, garlic, ginger, fish sauce/vegan fish sauce, sugar)
- Fresh vegetables (carrot, spring onion, etc)
- Gloves, a mixing bowl, an apron, and a container
You will:
- Mix and prepare your paste
- Coat and assemble your kimchi
- Pack and take home your own Kimchi
Cooking Inspiration & Tasting Ideas
Learn how to use kimchi in everyday cooking with Chef Pierre's demonstration of:
- Pork and kimchi
- Kimchi pancake
- Kimchi fried rice
Plus fermentation tips and a printed recipe card to take home.
After the Class
Explore a wide range of Korean ingredients available in-store, including gochugaru, napa cabbage, fish sauce, and ready-made kimchi, so you can continue your fermentation journey at home.
