Instructors Paan and Roger spent weeks searching for the most authentic Khao Soi across Northern Thailand, until one day they found a small open-air restaurant. In the back, an elderly man in his 80s quietly folded napkins, with a dog sleeping at his feet. The moment they took their first bite, they knew—they had found it. Over time, he came to treat Paan like a daughter, welcoming them back each year with a warm smile. On their second visit, they discovered he had been featured in a Netflix program, proudly displaying a banner that read “Netflix Chef.” Every year Paan and Roger visit Loong (“uncle”) Prakit.
Khao Soi, a signature chicken and noodle dish of Northern Thailand, reflects a rich cultural journey dating back to the era of King Rama V in the 1800’s. It is a beautiful fusion—Chinese egg noodles, Indian-inspired curry spices, and the bold, distinctive flavors of Thailand. In this intimate, hands-on class, you’ll learn to recreate this soulful dish from scratch—crafting a rich coconut curry broth, tender chicken, and the signature contrast of soft and crispy noodles.
