Formally trained in Tokyo, Chef Masa Hattori brings over three decades of culinary mastery to Japengo, where he has led the sushi program for the past five years. His experience includes tenures at esteemed establishments such as Sushi Ikekan, Okina Sushi, and Ariakeso, as well as leadership roles at top restaurants across Hawai‘i.
