Introduction to Home Canning

Join us for a two-hour discussion focused on the basics of home canning oriented toward beginners that want to understand the basics of canning before practicing preservation in the kitchen. In this lecture class we will discuss a brief history of home canning, canning tools, sanitization practices, water bath canning, pressure canning, different recipe types, and safe storage practices.
The lecture will also focus on the science behind safe canning including pH, the importance of time and temperature, bacterial growth, and why certain food items should not be canned. We will also discuss common canning additives including pectin, citric acid, canning salts, and vinegars.
Price: $15 per person
