The authentic article is extremely healthy, not greasy, satisfying and packs a really exciting explosion of flavour and aromatics, without ever being too spicy or hot - you can adjust both these elements when creating your own dishes.
What will I learn to cook?
Peter Vaughan will take you on a culinary journey involving a wide range of spices and wonderful textures and colours and help you create some delicious food that you would find for sale on the streets in this colourful country. He will guide you through:
* making your own garam masala and creating a 'spice intensity' that suits your palate
* oven baked samosas
* garam aloo
* tarka dhal
* quick aromatic rice pilaff
* (possibly) the best bhajis in Wiltshire
