Join us and guest teacher Polina Chesnakova in-person at Milk Street for a class that’s designed for the truly hands-on cook. We start by making a batch of dumpling dough from scratch, learning along the way how to knead it perfectly and rest it enough. We’ll put you to work making a filling that combines two meats, two herbs and two spices to achieve richness of both flavor and texture. While the dough and filling rest, you’ll have your first shaping challenge of the day as you make a quick batch of flaky, rich cheesy bread. Then, you’ll roll up your sleeves and use a mortar and pestle to help make an herby, nutty, pesto-style Georgian salad dressing that gets tossed over fistfuls of herbs, crunchy cucumber and a little chili. Finally, it’s time for shaping 201 as you try your hand at pleating those dumplings. With Polina as your guide, you’ll learn the folding technique that defines khinkali and attempt to achieve their lucky number of pleats. As your dumplings simmer and you get ready for our family-style dinner together, Polina will answer any lingering questions you have about Georgian home cooking.
About Polina: Polina Chesnakova is a Providence-based cookbook author and cooking class instructor whose work has been featured in Culture, The Washington Post, Saveur, and The Kitchn. Her next book, an exploration of life and cooking in the Post-Soviet diaspora through her family's recipes and stories, is coming out Sept 2025 with Hardie Grant NA.

Is this an in-person event?

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.
Is my registration ticket refundable?
No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.
Is a meal included?
Yes. In addition to a snack midway through class, you will sit down to a full dinner, served family-style, at about 7:00 pm.

Are children allowed?
Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.
How many people does one ticket cover?
One ticket covers one attendee.
How early do I need to arrive?
You are welcome and encouraged to arrive up to 15 minutes before the event begins.
