Never again will your dinners be derailed by the lack of one ingredient. Join Rosie Gill and April Dodd in-person at Milk Street to learn our unique, refreshing approach to culinary substitutions. We won’t just tell you to use scallions instead of shallots or parsley instead of cilantro: we’ll walk you through the why of it all. You’ll learn how to analyze and describe the work that an ingredient does in a recipe so that you can choose the right stand-in—or stand-ins—with confidence. We’ll put your newfound confidence to the test with experiments and comparative tastings that help you understand the impact of these ingredient change-ups. You’ll customize a carrot salad to your liking, choosing combinations of herbs, spices, vinegars and nuts that completely transform its identity. You’ll get familiar with our infinitely adaptable slashed chicken recipe, which just might be the last sheet-tray chicken recipe you need. And we’ll talk through the variables in our skillet spanakopita, a showstopper recipe that is deceptively easy to make. Whether it’s to save you a trip to the grocery store or to meet a dietary need, substitutions are critical for the confident home cook. Join us to become smarter and more creative in the kitchen.

About Your Instructors
Rosemary Gill is the Director of Education at Milk Street Cooking School. An educator dedicated to helping people create lasting home cooking habits, she oversees the development of hands-on and online cooking classes as well as Milk Street's community initiatives. Previously her work was primarily with non-profit organizations engaged in improving food security through educational means. She has leadership and teaching experience, having served in executive, managerial, and educational roles for various organizations including America's Test Kitchen, 18 Reasons, Cold Hollow Sculpture Park, Medford Farmers Market, The Somerville Arts Council, SPUR, Garden for the Environment, the Boys & Girls Clubs of San Francisco, and more.
April Dodd is Milk Street’s Assistant Director of Education. She began her culinary career at Middlebury College, where she discovered a love for nourishing people while supporting local economies through food. Since then, her cooking pursuits have included managing the college's food preservation program; working in a bio bakery in France; developing recipes for a cupcake shop; founding a culinary skills training program in Nairobi, Kenya; a stint as the chef at a women-only retirement community in her hometown of Lexington, KY; and working as a consultant to the UN Food and Agriculture Organization.
FAQsIs this an in-person event?
Yes. This event will take place in person at our location at 177 Milk Street in Boston. Expect plenty of hands-on cooking - not just a demonstration! If you are looking for a livestream cooking class, you can find our upcoming virtual class calendar here.
Does Milk Street require proof of COVID-19 vaccination?
Yes. We require that all students show proof of full COVID-19 vaccination. Please bring your vaccine card or a clear photo of it with you on the day of, along with a photo ID. We reserve the right to turn away anyone who cannot present proof of vaccination. If you are not able to attend due to vaccination requirements, we encourage you to check out our many livestream cooking classes.
Will I have to wear a mask during class?
As of April 2022, we do not plan to require masks during our in-person classes. If this policy changes, we will let you know. Please note: if at any time it is not safe to hold an in-person event, Milk Street reserves the right to cancel this class with any amount of notice. Consider making your travel plans accordingly. If we cancel an event, all attendees will be fully refunded. If you cannot attend this event as a result of COVID-19, however, you will not be refunded.
What are my transport/parking options getting to the event?

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.
Is my registration ticket refundable?
No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.
Is a meal included?
Yes. In addition to snacks throughout class, you will sit down to a full meal at the end of each class.
I have an allergy or dietary restriction. Can I still come?
We work hard to accommodate as many allergies and dietary needs as possible. You are welcome to write us at [email protected] to get more detailed information on whether this event is a good fit for you.
Are children allowed?
Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.
How many people does one ticket cover?
One ticket covers one attendee.
How early do I need to arrive?
You are welcome and encouraged to arrive up to 15 minutes before the event begins.
