About this Event

What’s on the Menu:

  • Homemade Tagliatelle with Freshly Milled Farro Flour
  • Summer Bolognese
  • Radicchio, Blue Cheese and Walnut Salad
Calling all you pasta people: join us in-person at Milk Street for a hands-on cooking class with Giulio Caperchi, who has literally produced tons of fresh pasta in his life to date. This class takes the phrase “from scratch” to a whole new level. You’re not just kneading your own pasta dough and learning how to fold, roll, cut, cook and sauce it. You’ll also be grinding your own flour from heritage farro, meaning that your fresh pasta is really, truly fresh. When you mill your own grains, you’re able to appreciate their aroma, texture and flavor in a way that is simply impossible with grocery store flours. Giulio will teach you how, why and in what proportion to incorporate alternative grains into pasta so that you can confidently and successfully experiment for years to come. To balance the pasta’s big flavors—this is no bland, flavorless pasta waiting to be drowned in sauce!—we’ll make a simple batch of a summery Bolognese, which you’ll see is not a contradiction of terms.
To enjoy the fruits of our labors, we’ll sit down to a family-style meal of perfectly cooked pasta, plus a classic Italian salad that combines radicchio and blue cheese with reduced balsamic vinegar and toasted walnuts. For dessert, look forward to fregolotta, a beloved Venician cookie, served over creamy gelato. Plus, every attendee of this class will go home with a box of Seven Hills’ dried pasta so that your pasta party doesn’t have to end when you leave Milk Street.
About Giulio: Giulio Caperchi has been making pasta ever since he was a young child. Born and raised in Italy, some of his fondest memories are making fresh pasta alongside his grandmother, "Nonna Lina" in her small village just outside of Rome. Giulio followed his passion for culinary arts after university and refined his skills in the kitchen at "A Tavola Con Lo Chef," a culinary institute in the heart of Rome. He is the co-founder of Seven Hills Pasta Co., which produces both fresh and dried pasta.
