About this Event

What’s on the Menu:

  • Griddled Sweet Potato Pancakes
  • South China Stuffed Eggplant
  • Hoisin Chicken Ho Fun
Put down the takeout menu, close that delivery app: come to Milk Street to learn to make food that’s even better than your favorite Chinese takeout spot. Guest teacher Kwoklyn Wan literally wrote the book on homemade versions of the best Chinese restaurant staples and he’s sharing three of his favorites at this in-person class. You’ll start by making a batch of sweet potato pancakes that have just three ingredients but will teach you an array of key techniques. Thoroughly kneaded, carefully shaped and delicately fried, these pancakes are the perfect balance of light and rich, crispy and tender, and savory and sweet. You’ll snack on them as you watch Kwoklyn demonstrate a street food favorite from Southern China: stuffed eggplant flavored by a half dozen of his must-have pantry ingredients. Kwoklyn hardly measures anything, making this recipe is an insightful lesson in instinctual cooking. Then, you’ll return to your cooking stations to make a batch of Hoisin Chicken Ho Fun, a tangle of wide rice noodles, chicken, garlic and scallions. You’ll learn why preparing your mise en place is essential to successful, high-heat stir frying, how to perfectly execute an elegant matchstick cut and why Kwoklyn’s etiquette recommendation for this dish is “bowl up, head down and slurp.” As you enjoy your sweet potato pancakes, stuffed eggplant and chicken ho fun at a family-style meal, you’ll get to ask Kwoklyn everything you’ve ever wanted to know about fast food the Chinese way.
