There’s nothing like the look and scent of a local Farmer’s Market! The choices of fresh and seasonal produce can be overwhelming but somehow you know you will always walk away with the best edibles mother nature has to offer.
In this class, let the chef do the shopping, then join him in the kitchen to reveal the goods bought at the market that day. Find out how seasonal produce has changed the way chefs prepare foods and how it influences the choices they make.
Salmon fillets are on the menu, but since we’ll be cooking “with the season” the rest of it will be a bit of a mystery! It could be salmon baked in foil with fennel seed, leeks and carrots, poached salmon with lemon-almond-herb gremolata, pan seared salmon with smoked collard green cous cous, or whatever the season throws at the kitchen! The farmer is in charge!
We’ll finish with a seasonal fruit galette. Much like making a fruit pie, but with quite a bit less effort, turning the season’s fruit into a galette will make you feel like a home-cook hero. You’ll still get the same toothsome, flaky crust and tender filling of pie, the freshness of the fruit of the season, yet without all the fuss.
We’ll cover the following: How to cook the perfect tender salmon, secrets of choosing great produce, the meaning of seasonal cuisine, making a flawless pie dough, and paring wine with seasonal foods.
No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets in case you wish to recreate the dish on your own after the class. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).
