Heritage grains have long been a cornerstone of New Mexico’s culinary history, offering unique flavors and exceptional nutritional benefits. Join Amber Benson from NMSU for an informative and hands-on workshop where you'll dive deep into the world of these ancient grains, including wheat, rye, and barley. In this workshop, Amber will guide you through the history, significance, and benefits of heritage grains, helping you understand how to incorporate them into your everyday cooking. After learning about the grains, you’ll have the chance to create your own rye sourdough starter using freshly milled grains from the workshop—perfect for bringing home and continuing your sourdough journey! Participants will also take home a bag of freshly milled grains, ready to experiment with in their own kitchens. We will also prepare rye sourdough crackers, which you’ll enjoy during the Sensory Lab, where we’ll explore the textures, flavors, and aromas that make sourdough and heritage grains so special.
