About this Event

Participants will learn to prepare two colorful, flavorful, and seasonal salads while exploring how vegetables, legumes, whole grains, nuts, and seeds fit into a heart-healthy eating pattern:

  • Blood Orange & Fennel Salad: Shaved fennel with sumpremed blood oranges, grapefruit and navel oranges topped with avocado, shallots, candied walnuts and a lemon maple vinaigrette.
  • Roasted Beet & Lentil Salad: Roasted beets, lentils, roasted shallots, pears, arugula and walnuts with a balsamic-dijon dressing.

We’ll also teach practical knife skills, including safely slicing fennel, and cover roasting beets, making dressings, and turning a salad into a satisfying meal.
