For one night only, three-time James Beard Award-winning Chef Gregory Gourdet joins Victoria's celebrated Chef Corbin Mathany at Ugly Duckling Dining & Provisions for an exclusive culinary collaboration on November 8th, 2026. This fantastic evening brings together two acclaimed chefs to create a five-course dining experience celebrating the ingredients, cultures and culinary connections of the Pacific Northwest. Featuring curated B.C. wine pairings and an intimate family-style setting, this is a rare opportunity to experience two remarkable culinary talents cooking side by side in Victoria.

Gregory Gourdet | Three-Time James Beard Award Winner

Gregory Gourdet is an internationally acclaimed chef, bestselling author and two-time Top Chef finalist. He is the founder of Portland's Kann, which earned the 2023 James Beard Award for Best New Restaurant and ranked No. 27 on North America's 50 Best Restaurants list in 2025. Gourdet was also awarded the 2024 James Beard Award for Best Chef: Northwest and Pacific, while his bestselling cookbook, Everyone's Table, received the 2022 James Beard Award for Best General Cookbook. Known for his bold flavours, Haitian heritage and innovative approach to regional ingredients, Gourdet is among the most recognized culinary talents in North America.

Corbin Mathany | Ugly Duckling Dining & Provisions

Chef Corbin Mathany is the creative force behind Victoria's acclaimed Ugly Duckling Dining & Provisions, where his cooking celebrates Vancouver Island's forests, farms and coastal waters. Since opening in 2023, Ugly Duckling has earned a place in the 50 Best Discovery guide, been named YAM Magazine's Best New Restaurant, and shortlisted for Air Canada's enRoute Best New Restaurant recognition. Most recently, Mathany won gold at the Canadian Culinary Championship's All-Star regional qualifier, earning a place at the national championship in January 2027. His inventive approach to local ingredients has established Ugly Duckling as one of Victoria's most exciting culinary destinations.

For this exclusive collaboration, Gourdet and Mathany will work together to create a five-course menu inspired by the Pacific Northwest, showcasing the exceptional ingredients and culinary traditions that connect Vancouver Island and Oregon. Each course will feature carefully selected B.C. wine pairings, with dinner served in an intimate, communal family-style setting.

Each experience includes a five-course collaborative dinner, curated B.C. wine pairings and gratuity. Tickets are sold exclusively in pairs of two, with each purchase reserving two seats for the selected seating. Guests should anticipate communal seating and shared, family-style dining. Both sessions will feature the same five-course menu and wine pairings.
