• Lobster Bisque

Claw meat, smoked paprika oil, parsley

Velvety tomato soup with a touch of cream, finished with fresh basil

Course 2

• Winter Salad

Baby spinach & shaved Brussels sprouts, green apples, candied pecans, goat cheese, roasted yams, pomegranate seeds, honey vinaigrette

• Beet Salad

Whipped mascarpone, roasted beets, micro greens, pomegranate seeds

Course 3

• CAPS Signature Champagne Surf & Turf

Petit filet mignon with a char-broiled lobster tail, champagne butter sauce, truffled mashed potatoes, grilled asparagus

• Crispy Skinned Salmon

Butternut squash purée, garlic-sautéed kale, herb oil

• Cacio e Pepe

A Roman classic of fresh pasta tossed with Pecorino Romano and cracked black pepper, finished with shaved truffle

• Pear & Mascarpone Tiramisu (No Coffee)

Ladyfingers soaked in cinnamon-pear syrup, layered with light mascarpone cream (no coffee flavor)
