This Gnocchi Class offers an immersive, 2-hour culinary journey into the world of Southern Italian home cooking. Students will learn the technical foundations of crafting potato gnocchi from scratch through live demonstrations and a hands-on session, guiding them from raw ingredients to a perfect, authentic meal.
What You Will Learn
- Gnocchi Secrets: Discover the keys to making tender gnocchi—from selecting and baking the right type of potato to ricing techniques that prevent a chewy texture.
- Pesto Rosso Expertise: Understand the difference between the famous basil-based Pesto alla Genovese and our savory, sun-dried tomato and almond-based Pesto Rosso. We will demo the process using a food processor while discussing the merits of texture preference and storage.
- Perfect Pairing: Learn how to properly cook your gnocchi (using the "float" method) and use starchy pasta water to emulsify the Pesto Rosso into a perfect, clingy sauce.
Class Schedule
- Introduction (15 mins): Welcome, instructor introductions, snacks and beverages.
- Pesto Rosso Demo (25 mins): A step-by-step look at creating the red pesto.
- Break (10 mins): Leg stretch and beverage refills.
- Gnocchi Dough Demo (20 mins): A detailed demonstration of the potato dough preparation.
- Gnocchi Forming (20 minutes): Student hands-on rolling and shaping using gnocchi boards.
- Gnocchi Cooking Demo (10 minutes): A demonstration on how to cook the gnocchi.
- Plating & Dining (20 mins): The fresh Pesto Rosso and gnocchi prepared in class is plated and served!

- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, charcuterie and fruit skewers, a dessert, and a Keurig coffee station.
- Tools & Equipment: Class aprons, professional gnocchi boards, and all necessary cooking tools needed to prepare this dish in class.
- Recipes: Every student receives the recipes used in class so this delicious meal can be recreated at home.

- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
