Global Fusion Tapas Pop Up by Dalton Perkinson

Dalton Perkinson is a Lakeview-based cook with a decade of global travel that have inspired his creative fusion dishes. The Global Fusion Tapas menu draws from kitchens across the world — small plates with big flavors drawn from recipes and experiences picked up along the way.

Inspired by cuisine from Japan, Mexico, India, Turkey, Georgia, and Southeast Asia. This is fusion that respects every kitchen it borrowed from! Come hungry and ready to explore the world with your friends at Fathom!

FEATURING:

• Japanese-Mexican Street Corn (Vegetarian) Charbroiled corn with white miso mayo, a reduced yuzu ponzu glaze, crumbled cotija, and togarashi. Contains: dairy, egg, soy, wheat, sesame.
• Garam Masala Meatballs with Georgian Tkemali Beef-and-pork meatballs seasoned with garam masala, served on warm pit or baguette with a tart tkemali plum sauce (cilantro, dill, garlic, fenugreek). Contains: wheat, egg, soy.
• Broccoli, Date & Carrot Spring Rolls with Peanut Sauce (Vegan) Cold rice-paper/summer rolls with broccoli, medjool dates, carrots, and fresh herbs. Peanut-free satay dipping sauce. Contains: Soy, sesame. Nut-free version (sunflower-butter sauce instead of peanuts for the satay sauce).
• Roasted Brussels Sprouts in Sesame-Hot Sauce (Vegan) Roasted brussels tossed in toasted sesame oil, rice vinegar, maple, and chili. Finished with sesame seeds. Contains: sesame, soy.
• Chile en Nogada Wonton Bites Crispy wontons filled with a sweet-savory pork-and-beef picadillo — apple, pear, peach, plantain, raisins, and warm spices — finished with a creamy nogada sauce, pomegranate seeds, and fresh cilantro. Contains: wheat, egg, milk, sherry (alcohol).

Doors at 5pm and Dalton's menu will be available to order between 5:30-8:30pm.

Fathom is 21+ and requires physical or mobile ID for all to enter. Fathom is also ADA accessible with easy entry through our front and garage doors.
