Celebrate Fête's young chefs with its second edition of our "Sunday Protégé Series".
A portion of ticket sales will benefit PAWS of Hawaii.
Join us for our second dinner in the Sunday Protégé Series , where we feature Fete alumn, Will Frank. Will is currently working as a wild game private chef in south Georgia. His menu is a departure from what you will normally see at Fete. He has created a unique menu showcasing some of the dishes he is preparing in south Georgia using local ingredients from Hawaii. This one night only menu will benefit PAWS of Hawaii- an animal rescue organization on the island of Oahu.
To Start:
Venison Gyoza pickled chard stem, Alii duxelle, pea shoots, sweet watermelon reduction Local Fritti green beans, okra, eggplant, yuzu house vinegar, charred alium buttermilk sauce Will’s cucumber pickles First Course: Ta’ape en Papillote Local citrus makrut Hawaiian chile beurre blanc, canoe roots (sweet potato, kalo, ulu), toasted mac nut crumble Second Course: A Tale of Two Pigs Two Lady Farmers braised shoulder, wild boar crépinette, roselle demi-glace, sautéed chard, candied calamansi For the Table: Okinawan sweet potato roll , umami whipped butter

Dessert:
Petal to the Mettle lemon balm and butterfly pea ice cream hot Kohana honey rum syrup, toasted pecan brittle
