This tasting looks at the art of assemblage in sake. It brings together four expressions from IWA, the Toyama-based brand created by Richard Geoffroy, the former Chef de Cave of Dom Pérignon. Each cuvée is blended from several rice varieties and yeast strains. Tasting them side by side shows how blending can shape aroma, texture, and structure.

The journey starts with IWA 5 Assemblage 3, then moves to Assemblage 5 and Assemblage 6. Each is a different interpretation of the same philosophy, and each differs in balance, aromatic profile, and depth. It ends with IWA Sake Reserves, which adds the complexity and maturity that come from extended aging. Together, the four sakes show how one producer can express many styles through blending, rice selection, and time.
