About this Event

To conclude this year's Fête de la Science, the Consulate General will present a documentary film Cuisine and Science: A Journey Through the World of the Senses, produced by Universcience as part of the Banquet exhibition at the Cité des sciences et de l'industrie in Paris.

Through interviews with leading scientists and renowned French chefs, the documentary explores how chemistry, physics, neuroscience and sensory science shape our perception of flavour and contribute to creating unique culinary experiences. It reveals the scientific mechanisms underlying our relationship with food and shows how research continues to transform our understanding of taste and gastronomy.

The documentary notably features Raphaël Haumont, Professor at Université Paris-Saclay, whose pioneering work in food science has led to close collaborations with Michelin-starred chef Thierry Marx. Together, they demonstrate how scientific research drives culinary innovation and opens new perspectives for the gastronomy of tomorrow. The film also features several leading figures of French gastronomy, including Claire Heitzler and Anto Cocagne, who share their perspectives on the dialogue between science, creativity and culinary transmission.

Educational, immersive and accessible to all, the documentary extends the themes explored throughout the festival and invites audiences to look differently at one of humanity's most universal experiences: cooking, sharing food and understanding the science behind every bite.
