We are excited to announce the kickoff of our Filipino Fusion Series 11/6 Thursday at 3 pm. This series is headed by Filipino born Lolito Chef, Vanessa Gante. Each week she will be bringing exciting dishes that combine the bold and vibrant flavors of both the Philippines and Mexico. Our Filipino Fuson Series will run every Wed and Thurs through the end of the year. Menus will change weekly and be posted online. Please see below for this week's offerings.

!) Why are you doing a Filipino-Mexico Menu? - Chef Gante grew up in The Philippines & we thought it would be fun to work with her on this series. Also, the Philippines & Mexico were colonized by Spain and were the main destinations of the Spanish Galleon Trade Routes in the Pacific. A lot of ingredients, techniques & names have been adopted between them.
II) What is Filipino Cuisine like? Super varied. With over 7000 islands and a history of trade and colonialism, it can be a little difficult to describe the cuisine. The 2 main influences are indigenous & Chinese cuisine but there is still plenty of influence from Spain, Mexico, India, Britain, The US & many more. This is really what makes it fun to dive into this cuisine filled with richness & variation.
