The Fermentis team is pleased to invite you to this edition of the Fermentis Academy, with the support of Bintani and Ecolab during the day, from 10:30 am to 4:30 pm at Felon Brewing Co., 5 Boundary Street, Brisbane. We’ll be there with you to share the latest information and answer your questions about yeast, bacteria and fermentation. Our aim is to help you as a brewer create the beer you want by understanding all there is to know about the fermentation world!

The program for the day includes the topics below.

- Innovation in Yeast & Bacteria strains, broadening the styles of beers a brewery can produce:

  • Low Alcohol beer fermentation using S. cerevisiae var. chevalieri strain selection;
  • Organoleptic comparison between Lactic or Lactic/Acetic kettle sour beer using Lactiplantibacillus plantarum and Levilactobacillus brevis bacteria.

- Yeast & hop interactions: We’ll look at our latest studies on the interaction of yeast with hops, presenting to you our latest work highlighting interactions between yeast and hops including the promotion of inference will be made on the flavour development in alcohol fermentation of specific volatile groups such as esters and thiols.

- Sour Beer - Ecolab will talk on sour beer production - which presents a potential threat to the integrity of regular beer manufacture with shared brewing equipment due to the differences in microflora. Robust hygiene practices around tanks, transfer lines, fillers and kegs are an important factor when it comes to keeping these microbial streams separated. This presentation is CIP-focused but also contains some relevant, open plant cleaning/external equipment hygiene discussion. After offering some basic CIP rules-of-thumb, critical areas of the brewing process that are thought to pose significant microbial cross-contamination risks when used for both sour and regular beer production are examined, and cleaning program guidance offered.

- Sensory Session: Bintani will present ‘Sensory in Style’ – a sensory education session examining flavours, faults and their mitigation across several styles of beer, from light lagers through to full flavoured stouts.

The different topics will be punctuated by beer tasting sessions and interactive moments including discussion time. On top of that, after the event, you’re invited to join us afterwards for drinks, food and more discussion. It’s a great way to finish this very special event!
