Opinions about which foods are "bad” and which foods are “good” for us are constantly changing and, often, conflicting. For example: Is processed food bad for us? And what even is “processed” food? The public’s definition and the industry’s definition are different and ever-changing about that and plenty of other food topics..
In her new book, Real Food, Real Facts: Processed Food and the Politics of Knowledge, UC Davis professor Charlotte Biltekoff explores friction between the U.S. public and food industry marketers when it comes to food processing, and what the role of scientific authority is in the relationship between the food industry and the public.
Join us for a talk with Biltekoff, recently named the first Darrell Corti Endowed Professor in Food, Wine and Culture at UC Davis, about what’s going on right now in food science, ecological sustainability, new technologies, regulation and oversight of food processing, and the industry ‘s influence over government policies.
