To Savor:

• Tomka Curry Scallop Crudo with Fig Glass – a first kiss of heat and sweetness.
• Smoked Ginger Soup with Carrot, Celery Bubble – warm, smoky, and a little steamy.
• Compressed Watermelon, Jamón, Caviar – juicy, salty, and unapologetically indulgent.
• Wagyu Filet with Chocolate Demiglace, Almond Tuile, Vegetable Ribbons – a dark, slow burn of flavor. (Vegetarian option: Whole roasted cauliflower with brown butter tahini, pomegranate molasses, gremolata, spiced dates)

• Grenada with Beetroot, Cucumber, Apple, Walnut Cream, Caramelized Walnut – a final bite that’s earthy, tart, and just a little dirty.

Tequila cocktails by El Tequileno, smoky mezcal pours by Rosaluna, bubbles from Valdo, and a zero-proof tease by Almave Tequila for those who like to keep it clean.
