Long before his introduction to the Tiki sub-culture, Doc Parks was collaborating with Artists and Musicians to create good times. Before moving from San Diego to the Bay Area and making a name for himself in the San Francisco Bar Scene, Doc ran a production company, curated art shows, managed tasting rooms, and played in bands. He was always a creative, and surrounded himself with like-minded people.
In 2011, craft cocktails and bar builds were his medium of choice. After cutting his teeth behind the bar at the Trader Vic’s Flagship location in Emeryville, Doc left the legendary restaurant to join the Future Bars Group, a powerhouse in San Francisco nightlife. Pagan Idol and Zombie Village would be brought to fruition in the coming years, with Doc at the helm. Both bars commanded the attention of restauranteurs and bar owners from around the country who sought out his expertise for their own projects. This prompted Doc to found DDP Hospitality Consulting. He consulted for various tiki bars and restaurants around the country and ended up accepting a General Manager role for one of his clients - Wilfred’s Lounge in downtown Napa. A year after opening Wilfred’s Lounge, Doc set out on a National Tour and hosted pop-ups at different commercial bars, home bars, Industry Trade Events and Tiki Weekenders. The tour will be wrapping up at the end of 2024.
Doc’s has been featured on different cocktail, spirits and tiki focused YouTube Channels and blogs. His recipes have been included in various publications and books, including The Complete Cocktail Manual: 285 Tips, Tricks & Recipes, a book that was written by Spirits writer Lou Bustamante, in partnership with the United States Bartenders' Guild, Minimalist Tiki, by Matt Pietrek and Carrie Smith, and Fassionola: The Torrid Story of Cocktails’ Most Mysterious Ingredient, by Gregorio Pantoja and Martin Lindsay.
In addition to DDP Hospitality Consulting, Doc and his wife also own Doc Parks Designs, their tiki mug and apparel company.
