According to Food & Wine Magazine, cheese has evolved considerably since the U.S. industrialized production in the 1800s. The 1970s and 80s ushered in the artisan cheese movement and today there are around 663 artisan cheesemakers in the U.S. Join WBUR arts contributor Solon Kelleher for a conversation with New England makers about the innovative approaches to crafting the best artisan cheeses right in our own backyard.
