Coravin x Zoku: Community Dinner

🍷 For our very first Community Dinner, we’re teaming up with Zoku Amsterdam to bring two communities together for one night. Zoku – named after the Japanese word for “tribe” – is an Amsterdam hotel built around bringing people together, so its rooftop living kitchen is the perfect place to share a table.

Here’s how the evening runs: you’ll settle in with an aperitivo, then enjoy a spread of dishes prepared right in front of you in Zoku’s living kitchen, each paired with a wine hand-picked by Coravin. There’s plenty to share and choose from, including vegetarian and vegan options – just bring your appetite.

A taste of the menu

To start
✨Sliced misato radish salad with whipped feta, fried basil, arugula and yuzu-wasabi dressing
✨Thinly sliced dry-aged smoked yellow and red beetroot with cashew cheese, mint chutney, rock chives and toasted walnuts
✨Halved rainbow carrots with hot-honey, crumbled feta, kyuri (pickled cucumber) and fried capers

The main event
✨ Grilled chicken thigh in Japanese orange-honey tare with koji miso tahina, blanched swiss chard and dagga gazawiyyah (Gazan dill-tomato salsa)
✨Pan-seared, skin-on salmon with koji miso beurre blanc, masago, chervil, dill and lemon zest
✨Pan-seared eringi “scallops” with Fuji apple batonette, basil aioli and pickled dill
✨Brussels sprouts with whipped ricotta, asazuke (pickled white cabbage), chili-almond rayu and verbena oil
✨Grilled bimi with muhammara, blistered cherry tomatoes and salad pea
✨Fried La Ratte potatoes with celery salt, pomegranate seeds, pickled dill, dill oil and orange zest

To finish
✨Hojicha white chocolate mousse with peanut brittle, sumac strawberries and lemon zest
✨Vegan banana cake with vanilla ice cream, shiso leaf and blueberries
✨Tofu-miso tartlets with black tahini and dark chocolate crisp
