Classic Class: Milk Matters—Sheep, Cow, Buffalo, Goat, $75
About this Event
Before a cheese is aged, washed, or rubbed, it starts with milk—and the animal it comes from matters enormously. In this class, we'll taste a lineup of cheeses made from sheep, cow, buffalo, and goat's milk, side by side, to explore how each milk's unique fat content, protein structure, and flavor profile shapes the final product. We'll discuss the seasonal and geographic factors that influence milk quality, why certain animals thrive in certain regions, and how milk choice connects to tradition and terroir. It's a foundational class for anyone who wants to taste cheese with a more discerning palate.
