Join Maria of Mestizo Academy for hands-on cooking classes that explore the bold flavours and rich traditions of Mexican cuisine. Each small-group session includes cooking, tasting, and take-home recipes. Offered in English and Spanish.
A staple in Mexican kitchens, Enchiladas de Pollo date back to the Aztecs, who rolled tortillas around simple fillings. Today, they’re a comforting dish enjoyed across Mexico, with regional variations.
In this workshop, we’ll make enchiladas with soft corn tortillas, shredded chicken, and homemade red and green salsa. Finished with sour cream, cheese, onions, and a touch of tradition, they’re flavorful, satisfying, and perfect for sharing.
