• The Rosé Renaissance: Why are some Rosés peach-toned and others ruby red? We’ll contrast the elegant precision of Rosé d’Assemblage (blending) against the bold, structural intensity of Rosé de Macération (skin contact).
• The Future of Freshness: We’ll look at how a changing climate is forcing the region to rethink its growing cycle and explore the new, "green" innovations arriving in the vineyards to protect Champagne’s signature acidity.
