Cayo Coco Rum Bar & Restaurant has launched a wine dinner series inviting Birmingham to experience the flavors and cultures of wine-producing countries. Executive Chef Chris Ippolito and Wine Director Josh Schaff of Cayo Coco have curated a 5 course Spanish meal with vintage wines from Pares Balta winery. The Pares Balta Wine Dinner Event is set for Thursday, July 11th at 6pm at Cayo Coco. Enjoy a night of wine and cuisines of Spain!
Cayo Coco is excited to welcome Ryan Stotz the Wine Ambassador of Pares Balta to host an exclusive wine dinner. Pares Balta is a family owned traditional organic winery. The history of Pares Balta began in 1790, when the first vineyards were planted on the estate that surround the manor house where the winery is located, in the Penedes region of Spain.

Cayo Coco, named after the popular island off the coast of central Cuba, will transport patrons to a new era: 1930s-40s Cuba. The inside is transformative with teal walls, rustic mirrors and brass accents—guaranteed to wow any visitor who wanders in to enjoy New Caribbean and tropical rum cocktails located in Founder’s Station, in the heart of downtown Birmingham, Alabama on the corner of 1st Avenue North off Morris Avenue. Owner, Andrew Collins and Managing Partner, Josh Schaff opened Cayo Coco Rum Bar and Restaurant in 2019. The rum bar’s design is a nod to pre-revolution Cuban high life, a period when tourism was taking off and the country’s capital city was a playground for socialites and celebrities. The mural inside Cayo Coco reads “Los tragos hacen milagros,” which means “The drinks make miracles.” Cayo Coco has over 150 rums on its spirits list from 25+ countries and the rum bar’s beverage menu boasts 20 cocktails of different styles—from mojitos and highballs to daiquiris and tiki drinks.
Executive chef Chris Ippolito is behind the Cayo Coco menu, which is his take on Latin-American food with a Southern twist. Bringing a vibrant and sustainable approach to the menu. Chef Ippolito is deeply influenced by his Birmingham roots and a rich family legacy in the local restaurant scene. After honing his skills at The Admiral in Asheville, where he embraced innovative techniques and a commitment to sustainability, Chris returned to his hometown. Here, an agrarian ecosystem and an amazing community of farmers allow him to maintain relationships with over six local farms and fishermen. Next time you’re in, try Chef Ippolito’s favorite dish: the Duroc Pork Porterhouse. It’s a creative take on Caribbean green seasoning pork, incorporating local and foraged produce to add a Southern twist to a Caribbean classic. For Cayo Coco, Schaff says he and Collins wanted to design a concept different from an image of Old Havana with pastels and vintage cars. “We were the first tenants in Founder's Station. And it basically took us the longest because there were so many details that we had to have and that we didn't want to miss out on,” says Schaff. Schaff and Collins chose vintage-style couches reminiscent of the 1930s and 1940s and, for accents, woven basket chandeliers, pendant lights, and brass tables were acid washed to create a vintage look. To create a colorful and romantic high-end dinner experience, the designers also mounted the walls with fresh bird of paradise flowers.
Owner, Andrew Collins says one of his favorite designs in Cayo Coco is the enlarged black and white photo on the wall showing Collins’ parents on their honeymoon in Cuba in 1935. Andrew Collins is the son of well-known Greek immigrant parents who helmed one of Birmingham’s most famous and oldest hot dogs stands-Lyric Hot Dog and Grill which opened in 1957. Andrew started working there at thirteen, joined full time at twenty-two, and officially took over after his father retired in the 1980s. After fifty-six years at one location, the stand was forced out as part of renovations to the Lyric Theater, a century-old vaudeville house. Rather than relocate, Collins closed it in 2013. He opened The Collins Bar a few months prior to the Lyric’s closing. Considered the city’s premier cocktail bar, it has no drink menu. Bartenders create drinks after quizzing customers for their preferences. In 2017, Collins added Lyric hot dogs to the bar’s food menu. Collins relishes his personal interaction with customers, some of whom he’s known his entire life. "If we don't already know you, before you leave, we know your name.”
