About this Event

What does responsible seafood really mean? It’s not just about what fish you buy, it’s about where it comes from, how it is transported and handled, what happens before it reaches the kitchen, and even which species we choose to put on the menu.

For our September Future Green Members Monthly Meetup, we’re heading to TABLE by Sandy Keung for a fascinating behind-the-scenes look at seafood through the eyes of Chef Sandy Keung, Chef-Owner of TABLE.

Chef Sandy takes an unusually scientific and ingredient-led approach to seafood. TABLE is the only restaurant in Hong Kong with its own resident marine biologist and in-house ozone depuration tank, reflecting Sandy’s belief that responsible seafood starts long before an ingredient reaches the kitchen.
