Beyond the Barrel is your invitation to celebrate the magic of harvest season at Carboy Winery with an unforgettable evening of incredible food, exceptional wine, and the people who bring every vintage to life.
Kick off the night with a welcome pour straight from the barrel and passed bites before settling in for an indulgent five-course dinner, thoughtfully paired with a lineup of special wines. From cozy fall flavors and rich, seasonal ingredients to the stories behind each pour, every detail is designed to take you a little deeper into the world of Carboy. Hear directly from the chef about the inspiration behind each course, discover the art of pairing food and wine, and toast to the hard work, creativity, and Colorado-grown passion that brought the 2026 vintage to life.
